5 year Anniversary!

Today is our 5 year Anniversary! We had big plans to go here for the night. This is Jared's Mom & Dad's timeshare in Midway.

Unfortuantely Jared came home sick yesterday from work and we had to stay home. Which is probably a good thing because I ended up catching it and getting sick in the middle of the night- I was even sleeping in the other bedroom! What a way to spend our day! At least we were together- laying on our couches watching tv. This weekend after we feel better we will go to dinner or something special. Oh well- I still love you Jared- even if we are home sick!

FALL BREAK!! That means 4 days off for me! What to do? I wish I was going to Vegas to see my sister and her family but my cousin Mika is getting married so I have to stick around. Sleep sounds like a great option-oh and possibly cleaning the bathrooms. I am sure I will go to lunch with Jared on Thursday and Friday too..should be great!

Stuffed Mushrooms

Jared's Aunt Donna called and wanted the recipe for my stuffed mushrooms-well really my Mom's recipe. That made me want to make some for us. They are so good!

Stuffed Mushrooms
1 lb. sausage -I usually use Jimmy Dean, as spicy as you like.
2 lb. mushrooms- wash and remove the top
8 oz. cream cheese

Brown sausage and drain off grease. Add cream cheese and mix together, let the cream cheese melt. Use a teaspoon and stuff sausage/cream cheese mixture inside of mushroom after top is removed. Bake at 350 degrees for 35 minutes.

Enchiladas

I got this recipe from Amanda's blog awhile ago and we love it.

Honey- Lime Chicken Enchiladas

6 Tablespoons Honey
5 Tablespoons lime juice
1 Tablespoon chili powder
1/2 teaspoon garlic powder


1 pound chicken, cooked and shredded (I use 3 small chicken breasts, cooked in the crock pot for 6-8 hours-usually done the day before)
8-10 flour tortillas
1 pound Monterrey jack cheese
16 ounce green enchilada sauce
1 cup sour cream


Mix the first four ingredients and toss with shredded chicken. Let it marinate for at least 1/2 hour (I toss mine together the night before). Pour about 1/2 cup enchilada sauce on the bottom of a 9x13 baking pan. Fill flour tortillas with chicken and shredded cheese, saving about 1 cup of cheese to sprinkle on top of enchiladas. Mix the remaining enchilada sauce with the cream and leftover marinade. Pour sauce on top of the enchiladas and sprinkle with cheese. Bake at 350 degrees for 30 minutes.
They really are good enchiladas!

Nothing Much

Life is moving along right now at a normal pace. We are still waiting on the offer on the house- the bank is just taking it's time...which is fine with us since we still have a place to live right now, but we have no idea where we will go when we have to move. Hopefully something will come up at the right time, and in the same neighborhood would be great.
Our anniversary is coming up in a few weeks, we will probably just go to a movie and lunch or something. Jared is debating on if he should take the day off or not, I am, it is a half day so why not right?
I love listening to General Conference every six months, it gives me the spiritual uplift that I need. It reminds me all that I need to work on.
